Meatloaf Chia Roll Burger with Mexican Spicy Ketchup, Mustard, Pickled Onions and Guacamole

Ingredients

6 Multiseed Chia Rolls, split

For the meatloaf:
250g Rindless, streaky bacon, stretched
1 tbsp Olive oil
1 Medium onion, chopped
2 Garlic cloves, crushed
1 tbsp Sage, chopped
1 tbsp Thyme, chopped
600g Minced beef
300g Minced pork

For the guacamole:
2 Avocados, stoned and peeled
1 Chilli, finely chopped
2 Shallots, finely chopped
Good squeeze Lime juice
1 tbsp Olive oil

For the mustard pickled onions:
2 Onions, sliced
3 tbsp English mustard
2 tbsp Caster sugar
Pinch Salt
1 tbsp White wine vinegar

For the spicy ketchup:
500g Cherry tomatoes
1 tbsp Demerara sugar
1 tsp Dried chillies
drizzle Olive oil

Process

To make the burger, preheat the oven to 180ºC and line the base and sides of a 23cm x 13cm loaf tin with the bacon. Heat the oil in a frying pan and stir in the onion. Cook over a medium heat for 10 minutes or until softened. Stir in the garlic and herbs. Set aside to cool. Place the beef and pork in a large mixing bowl. Season with nutmeg, salt, pepper and add the cooled onion mixture. Mix well together. Press the mixture into the lined loaf tin and cover with the bacon. Cover with foil, place on a baking sheet and cook for 1 hour. Allow the meatloaf to rest for 10-15 minutes before removing from tin and slicing thickly.

To make the Spicy ketchup, place the cherry tomatoes on a roasting tray. Scatter demerara sugar, dried chillies and a drizzle of olive oil over the cherry tomatoes. Season well. Place in a low oven, 140ºC and slowly roast for 40-45 minutes. Place in a blender and whiz until smooth or serve chunky. Allow to cool

To make the guacamole, simply stone and peel the avocados and finely chop. Gently mix with the chilli, shallots, lime juice and olive oil and season to taste. You can add chopped coriander to the guacamole or simply pile on top of burger.

To make the Mustard Pickled onions, slice the onions and soak in water for 10 minutes. Meanwhile in a bowl, mix together the English mustard, caster sugar, salt and white wine vinegar. Drain the onions well and add them to the mustard sauce and mix well.

Layer up the Chia rolls with guacamole, 2 thick slices meatloaf, coriander and a drizzle of spicy ketchup. Serve onions on the side.
