Sweet Tomato Flatbreads with Chunky Avocado Relish and Crispy Ham


One medium pizza doughball
110g on the vine cherry tomatoes cut in half
1 tsp sugar
Salt and freshly ground black pepper
½ tbsp olive oil

For the avocado relish
1 small ripe avocado halved stoned, peeled and cut into chunks
4 small peppers, roasted and halved
Squeeze of lemon juice
1 tbsp olive oil
Salt and pepper

2 slices Serrano ham, pan fried
Handful basil leaves


Place the frozen doughball on an oil try and covered with oiled film. Defrost the doughball in the fridge overnight so it’s thoroughly defrosted and ready to use the next day.

Preheat oven to 220°C.

Using a little flour roll out the dough to the size of medium sized dinner plate and place on a baking tray lined with parchment paper.

Line the base of the pizza with the tomatoes and roasted baby peppers. Sprinkle with sugar, season well with salt and freshly ground black pepper and trickle over the olive oil, bake in the oven for 10 minutes.

For the avocado relish mix all the ingredients together and set aside.

To serve, scatter over the avocado relish and tear over the crispy ham. Finish with the basil leaves and serve straight away.
